If you are wondering what to make in celebration of Canada Day and the 4th of July then here is a very quick and simple recipe that delivers a wonderful dessert.
Blueberry Tea Cake
1 c powdered sugar
1/2 c unsalted butter (softened)
3 large eggs
1/2 tsp vanilla extract
1 1/4 c all-purpose flour
1tsp baking powder
1/4 tsp coarse salt
1/4 homogenized milk
1/2 tsp lemon juice
1 c fresh blueberries
1/8 tsp salt
Preheat oven to 350
Spray 3 mini loaf pans with baking spray
In large bowl, combine sugar and butter with electric mixer.
Add vanilla and eggs, one at a time beating well after each addition and set aside.
In medium bowl, combine flour, baking powder, and salt stirring well and set aside.
In a small bowl combine milk and lemon juice and let sit for 10 minutes.
Add flour mixture to butter mixture, alternately with milk mixture, beginning and ending with flour. Add blueberries and divide batter evenly between the three loaf pans and bake in oven for 22-28 minutes.
Once cooled, slice the loaves and serve with a dollop of Devonshire cream.
Yum, yum!
This is perfect to serves to a group of guests on a shaded outdoor table.
