The History of Chinese Tea

The first harvesting of tea in China

Do you know how tea was discovered, and by whom? I have been researching, asking, and googling, and I think I have all the information, or at least most of the essential information.

No matter where you are, the name James Norwood Pratt should certainly sound familiar. He is widely respected and considered to be the world’s best tea educator. He is truly an expert when it comes to the history of tea and received a Lifetime Achievement Award recipient at the 2015 World Tea Expo.

James Norwood Pratt has written on the discovery of tea. His history is accurate and educational. I took some of his histories and created this blog so you can understand the story.

The Emperor Shen Nong

#1. Who discovered tea?

China is where it was discovered. The history of the tea timeline is 2737 BCE. It was Emperor Shen Nong. He was known as the “Divine Emperor” who unveiled the first plant known as “tea“.

He was quite interested in exploring potential ideas for cures. He suffered from an unusual malady, which he was determined to find an elixir.

#2 Eisai brought the first seeds to Japan

How did tea manage to enter so many South Asian countries at that time? The answer is a monk by the name of Esai.  He was a scholar a Tendai, the absolute best school that taught Buddhism.

#3 The origin of tea

He travelled to Mount Tiantai (Tendai in Japanese) in China to further his studies. He first planted seeds in Mount Sefuri, on the border of Fukuoka and Saga prefectures as he felt it was a suitable place to grow this small plant. This was the beginning of a plantation in Uji.

#4 How did Boston get involved?

A group of Massachusetts colonists disguised as Mohawk Indians boarded three British tea ships, Dartmouth, the Eleanor, and the Beaver, and dumped 342 chests of tea into the Boston Harbor.

The colonists demanded that the tea be returned to England. After Massachusetts Governor Thomas Hutchinson refused, a Patriot leader Samual Adams organized the “Tea Party” with about 60 members of a group known as the Sons of Liberty, his underground resistance group. It sounds incredible, but the British dumped tea in Boston Harbor on the night of December 16. It was valued at some $18,000. That was an astonishing amount of tea!

The aristocracy was furious that their beloved, imported tea was now in the ocean. The British government responded viciously, and the episode escalated into the American Revolution!

#4 Opium trafficking began

Trade relations between England and China had curdled. The British introduced opium trafficking to China. The intent of the British was to create a dependency among the Chinese and get them to exchange opium for tea. It was a tactic the British had planned because it was solely a financial benefit for the Brits. They knew the tea industry was plentiful and China could use a guaranteed source of funding, no matter what the cost was.

#5 Robert Bruce discovered the amazing wild tea plants

The year was 1823, Robert Bruce was a Scottish trader and explorer. He journeyed to Rangpur, the capital of the Ahom Kingdon in Upper Assam. On this particular excursion, Robert met with Bessa Gaum, the chief of the well-known indigenous tribes of the Indian northeast region. Robert wanted to learn about the indigenous plants that grew in the jungle area.

Robert created a wonderful and long-term relationship with the Singhpo tribe, and by doing so, he was able to collect samples of tea plants and seeds. He discovered that if the tea was good, a planting industry could be developed in Assam to rival that of China, making him a fortune while drastically boosting Britain’s economy. He did, and that is how Assam became the top tea-producing region in India.

#6 Introduction to the sensational fermentation process

Fermentation is a process that can start with green tea. They are harvested, partially oxidized, and allowed to undergo microbial fermentation.

The fermentation procedure can be stopped by either pan-frying or steaming before they are completely dried.

Green tea leaves are considered to be a very light fermented tea. Green tea leaves are susceptible.

Semi-fermented tea such as Oolong is a green tea, that is allowed to undergo 10% to 80% fermentation. Fermentation creates a stronger flavor, and a darker color once steeped.

#7 Chinese Wedding Tea Ceremony

The wedding ceremony is a traditional event. The colours red and gold are the main colour for the bride and wedding party. The colour red is associated with many traits such as success, loyalty, honour, fertility and love.

A tea ceremony is a Chinese tradition where the bride and groom serve tea to their respective families, including parents, grandparents, aunts, uncles, and other esteemed elders. 

The couple receives well wishes and gifts, and it’s an act of welcoming either the bride or the groom so that it unifies both families.

I bet you have heard so many “do’s and don’t’s” on the right way to make tea throughout the years that you may wonder if you are making it the proper way?  There are so many tea myths from ancient times, cultures, and misinformation.  Let’s see just how much or how little you know about tea.

#1 Myth- Are Black Tea and Orange Pekoe the same?

Absolutely not! That is such a misconception, in all actuality, black tea is oxidized by using a heat process.  This impressive process removes excess moisture.  Orange Pekoe is the name for the grading of tea leaves.  OP is an acronym for the quality of tea.  Flowery Orange Pekoe is (FOP), Golden Flowery Orange Pekoe is (FGOP) and Finest Tippy Golden Flowery Orange Pekoe (FTGFOP), each acronym decides how superior the tea is. 

#2 Myth – All Tea is Steeped in Boiling Water?

YIKES, that would be real damage to such lovely and delicate tea leaves.  Due to the fact that tea is grown in different regions and produces a wide range of tea, green tea is best to boil the water and then let cool down for 2 -4 minutes.  That procedure won’t “shock” the leaves,  and offer a pungent taste.  

When making a pot of black tea, it is best to bring the water to a rolling boil, and let the water “sit” for 4  minutes.  Pour the water over the tea leaves and steep for 4 minutes. You will see the color get darker and darker.  

A true “teaist” would NEVER use tap water to create a wonderful pot of tea.  There are far too many chemicals added to what is called: faucet water, running water, or municipal water.  The water is processed through a treatment plant that uses algicide, chlorine, chlorine dioxide, muriatic acid, and sodium bicarbonate. You simply cannot make a “virgin” cuppa with all of those substances.  The best water to use when making a perfect cuppa is filtered or spring water.  You are using the natural process which refines a much better taste. 


#3 Myth –  Are Herbal and Tisane Tea The Same?

The world tea was derived from Emperor Shen Nung in 2732 B.C. when leaves from a wild tree blew into his pot of boiling water. He was immediately interested in the pleasant scent of the resulting brew and drank some. The word “tea” was officially used for this marvelous drink, and today, we have a wide selection of different teas.  Tisane or herbal tea is much different.  The truth on tea myths is that herbal or tisane tea contains caffeine, they do not.  Tisane or herbal tea is caffeine-free and it is great for women who are pregnant, have sleeping issues, on medication, are anti-inflammatory, and needs to reduce anxiety. 

#4 Myth -Tea Never Expires

One of the big tea myths is that it never expires, wrong! Tea needs to be consumed before it expires.  It cannot be kept in the cupboard for years, it becomes bland in flavor and loses its character.  The leaves dry out quickly, along with being brittle.  It also absorbs other aromas that are in the cupboard like garlic, spices, and strong fragrant items.  Tea leaves are very delicate and in order to have the freshest taste possible, it needs to be consumed within 6 months of purchase.  Tea is very fragile and should be handled carefully. 

 #5 Myth -The Best Way To Drink Tea Is With Milk and Sugar?

A great-tasting cup of tea should be done “neet“.  Condiments will alter the true taste of tea, and what tea should actually taste like. Sugar, milk, cream, and lemon will over-power the natural, earthy notes and disguise the regular flavor.  To truly enjoy the “Umami”, a Japanese term which means “delicious flavor” tea should be made by proper steeping method and drinking it hot, not cool.

#2 Tulsi, the Queen of herbs

Tulsi is one of the most common wild, growing plants in Southeast Asia. Also known as “Holy Basil”. This green leafy plant, also known as Ocimum sanctum L.  It has a long history with Indian medicine and is native to Southeast Asia. This ancient medicine helps treat many conditions, from eye diseases to ringworms. It is considered to be a powerful tonic for the body, mind, and spirit. Here is a list of what tulsi has been used for and receives amazing results:

  • Use its fresh flowers for bronchitis.
  • Use the leaves and seeds, with black pepper, for malaria.
  • Use the whole plant for diarrhea
  • Use the leaf when you experience symptoms of headache, nausea, and vomiting.
  • Use an alcohol extract to address the concerns of stomach ulcers and eye diseases.
  • Use pills and ointments for eczema treatment.
  • Use an essential oil made from the leaves for insect bites.
  • Used to relax and calm the mind

#3 Alchemy, the healing potion for the body and soul

The art of alchemy was discovered in the early 18th century when scientists used pharmacology, chemistry, and medicine to manage serious suffering. Sleep deprivation was assessed and common herbs such as chamomile, lavender, and tulsi were prescribed to overcome lack of sleep. Today, you should try to use one or all of the listed herbs to conquer any sleep issues, it is much better to go the natural way than relying on prescriptions. It is best to stay away from any caffeine throughout the day. Even the slightest amount can interfere and put you in a “lack of sleep cycle”.

Sometimes our mind is racing like a gerbil on a wheel, and we just can’t stop it. When that happens, (which it will), be kind to yourself. No matter what is happening in your life, sleep truly is the elixir of life. You can focus, and manage issues way better once you have had the proper sleep time necessary. We make sacrifices not realizing how important it is to have 7 – 8 hours of sleep daily.

1. Why Anxiety Happens?

Anxiety has been around for centuries. It is your body’s natural reaction to stress. It is based on the three doshas, Pitta, Vata, and Kapha, and has been used as a treatment for mental health.

#1. Ayurveda consists of the three doshas

It is a simple process. Also, known as mind-body types, “doshas” are the foundation for Ayurveda. Doshas express unique blends of physical, emotional, and mental characteristics. The three doshas: that Ayurveda is based on are Vata, Pitta, and Kapha, which are derived from the five elements of nature, which are: Space (akasha), Air, Fire, Water, and Earth.

#2. The Vata Character

The Vata Dosha contains the properties of ether and air elements. Vata is the core source for our energy and movement as well as nerve impulses. Common necessities such as breath, speech, digestion, and circulation are all manifestations of Vata. 

People who are Vata dominant are enthusiastic, creative, and smart. They are quick-witted and always ready for new challenges. They love music, dancing, and busy activities. They prefer rooms that are warm, and comfortable, nice bulky blankets and big pillows are what they desire. 

They can be radical with their expenses and tend to be bouncy. They value deep spiritual connections and find meditation comforting. 

Vata types are usually either very small or large people. They have thinner skin and much smaller eyes. They tan well during the summer months but need to be careful as they tend to age rapidly. 

#3. The Pitta Character

The Pitta Dosha contains the properties of fire and water elements.  Pitta regulates all metabolic processes in the body.  It regulated the body temperature and hormonal balance. It manages our hunger, thirst, and even intelligence.  Pitta types tend to be organized with their money, and are also very practical with direction. Pitta types love to exercise and prefer organic loose-fitting clothing.

Pitta types have difficulty relaxing, especially after long bouts of work time, and suffer from sleep disorders.  They usually suffer from gastritis, stomach, and intestinal ulcers, acne, and eczema. They must be mindful of their liver that it does not suffer from infections.  

#4. The Kapha Character

The Kapha Dosha contains the properties of water and earth elements. Kapha controls the structure of the body. Its main purpose is to hold the cells together and form the muscle, fat, bone, and tissue. Kapha is considered to be the protector. 

Kapha types carry a strong physique, have large, soft eyes, radiant skin, and thick hair. They sleep well and have regular digestion, however, they must be careful, or else they suffer from weight gain, fluid retention, and allergies. Also, they may suffer from depression. 

Kaphas are normally very calm, kind, and loving.  In general, they enjoy life.  When in balance they are loyal, patient, strong, and supportive. They tend to hold on to jobs, and relationships for as long as possible, even after there is unhappiness. They tend to seek stimulation and suffer from a feeling of cold, they need to always keep warm.

Ayurveda is a complete healing system. It is based on ancient Eastern practices that can give us the tools necessary to create health on a daily basis.  Ayurveda is based on the principles of the nature of healing and lifestyle changes. It allows you to thrive physically, emotionally, and spiritually. It brings peace and calmness to the body and mind and achieves optimal health. Although it originates from South-Eastern Asia, it is primarily a way of life and not focused on religious beliefs.

The Final word 

No matter which character you think you are most like, make sure you know that your body balance can be restored. Whether it is changing your present lifestyle or including more nutrients, your body will transform in a good way.

The inspiring ways Valentine’s Day can be shared.

The first Valentine’s Day was discovered in the the year 496! It originated as a Christian celebration to immortalize a martyr, who was declared a saint. St. Valentine was a clergyman during the Roman Empire who ministered to persecuted Christians.  His body was buried at a Christian cemetery near Ponte Milivio, which was north of Rome on February 14th. The Romans also celebrated the beginning of spring and proclaimed the festival Lupercalia.

Why is Valentine’s Day celebrated?

Valentine’ s Day is the one day a year that we stop, ponder and show love and appreciation to our sweethearts. Simple tokens of affection are roses, chocolates, love letters, and a romantic dinner. It is a time, when flowers are starting to sprout and love is in the air. Throughout the year, we are so attuned to work, family, and various other responsibilities, Valentine’s Day is the day we are to rekindle our love.

How the world celebrates Valentine’s Day.

It’s all about cultures and traditions. We will share the different ways that countries celebrate this heartwarming folklore.

South Korea

South Korean’s celebrate love on the 14th of every month, not just Valentine’s Day. These include May’s Rose Day, June’s Kiss Day, December’s Hug Day and April’s Black Day. South Korean’s truly value their “loved one”. They try to show their appreciation every month so their love will grow. It is also beneficial to have the children see the loving relationship, it adds stability.

Argentina

The Argentinian’s love to celebrate this special day in February, but they also put one week aside in the month of July, where they honor “Sweetness Week”. They exchange kisses, and sweet treats, what a great idea!

France

France has been considered to be the most romantic city in the world. Love is everywhere, and you are most likely to find the alluring emotions in the heart of Paris. The city named St. Valentin, which is also known as “The city of love” celebrate it from the 12th to the 14th of February. The Welsh are well known for their traditional famed woodwork. They celebrate love on January 25, which is known as St. Dwynwen’s Day. Wooden spoons known as “love spoons” are carved and exchanged between lovers. Each year a new spoon is carved which reflects the love that was shared during the previous year. It is taken very seriously and meant to be very sincere.

Canada

Valentine’s Day is celebrated every year on the 14th of February. It is a time for new love to show their emotions to each other by exchanging cards, flowers, chocolates, roses and perhaps a proposal. It’s a romantic time when daffodils and tulips start to pop up and birds are starting to chirp. All across Canada, from P.E.I. to British Columbia, this special day is embraced.

Recently, the forecast for black tea growth from 2017 to 2024 was revealed and it is explosive. The forecast for the global tea market is estimated to be worth about 49.46 billion US dollars by the year 2024. That alone is confirming the Millennials, also known as Generation Y or the Net Generation are going to be huge tea consumers.

Black tea fusions and herbal teas are among the growing varieties of premium tea consumption. The traditional “black tea” with cream and sugar has practically disappeared like the “Dodo Bird”, the Millennials are the new generation, and have acquired a different taste.
